The restaurant’s new winter menu begins with new moreish entrees like Soupe a L’oignon Gratinee, a vegan take on the quintessential French onion soup which is made with cashew ‘gruyere’ cheese, and Velouté de Carotte, another wintery soup made with organic carrots, unique and subtle pink lentils and plant-based vegan butter.
Warming winter main courses include their new Cassoulet Toulousain, a slow-cooked white bean casserole with in-house artisan-made meat alternatives and a selection of seasonal produce, and their Poulet Basquaise, another slow-cooked dish with the Chef’s textured and flavorful plant-based chicken, melted peppers and a bed of hearty semolina.
Head Chef Yvette Caron has also taken inspiration from local seasonal produce in creating a menu that offers diners a natural richness and depth of flavor and the restaurant is known for their use of wild food, organic produce and farm-to-table ingredients.
